VEGAN Bruschetta is a super flavorful, easy appetizer that is sure to impress! If you’re tired of feeling like you should serve something besides chips or crackers with your wine, try this simple and classic bruschetta recipe and you’ll surely dazzle the crowd! You don’t have to plan in advance for it, as long as you have tomato and basil on hand (which I make it a point to ALWAYS have!), then you should be able to make a delicious VEGAN bruschetta on the fly!
You’ll need to buy a French bagget from your local bakery or grocery store. I was lucky enough to find a bag full of bagget’s, already cut, and lightly oiled and seasoned with olive oil and parsley. Perfect! Now, the meal I was planning was only for D and I so this small bag of prepared bread was great. If I were to have a party or bring bruschetta to someone’s home, I would just buy a whole French bagget to ensure there would be plenty!
Ingredients: (yields 12 slices)
1 French Bagget
5 Roma tomatoes, diced
2 cloves garlic, minced
1 handful of fresh basil, chopped finely
.25 tsp salt
.5 tsp pepper
3-5 T extra virgin olive oil
Directions: Fold all ingredients together in a bowl until well mixed. Chill for at least 30 minutes or up to several hours to allow flavors infuse. If you’re doing your own bread, set oven to 375 degrees and slice entire bagget into thin slices. Place slices on a baking sheet. If you prefer, lightly brush with extra virgin olive oil and sprinkle with parsley or salt and pepper. Bake slices for 5-8 minutes, checking periodically. Allow bread to crisp but make sure not to burn it! Once your bread is ready place it on your serving platter and spoon a small of bruschetta on each slice of bread. Bruschetta may be served warm or cold, that’s just how wonderful it is!
